Pure Mongolian pleasures
This is the wild northern grassland where Mongolian horses bear the sons and grandsons of the Great Khan. It's a lot quieter these days and full of tasty surprises, as Pauline D. Loh discovers at
the dinning table.
It would be very hard to attract me with lamb, I told myself at the end of six days in Inner Mongolia. As delicious as the lamb here was, I had just about reached my limited quantity for the month, maybe the year. And then Chef Luo Gang came in and served a plate of lamb breast.
“This is the best part of the animal kept only for special guests”, the chef said as he took out a sharp little knife with a shiny bone handle. He then continued to shave little slivers of white from the breastbone, and carefully placed them on my plate.
It was a very tactile(触觉的) experience which was driven by the determination to identify taste and texture, and I kept chewing until I finished every slice.
It did not taste like fat, although it looked like fat, and it was so soft that it was hard to think of it as bone or even cartilage(软骨). It did not have the pungency(味觉刺激) of lamb, and dipped into the little saucer of pickled wild flowering chives(小香葱), it was delicious.
Luo Gang stood and smiled approvingly as we ate every piece, and then made his way back into the kitchens, leaving his bone-handled knife stuck upright on the lamb breast.

Justo Gallego Martinez, an 86-year-old farmer from Spain, has spent the last 50 years of his life single-handedly building a large cathedral(大教堂) in a suburb of Madrid, without any architectural knowledge or construction experience.
Considering the size of Justo Gallego’s cathedral, almost 40 meters (131 feet) tall, with its large dome and spires(尖顶) towering over nearby apartment buildings, it’s almost impossible to believe it’s the work of a single man. But it just goes to show how far people can stretch their limits in the name of a higher purpose.
In Gallego’s case, it was his faith and love of God. His mother was very pious(虔诚的) and he grew up with a deep Christian faith and a strong desire to devote himself to the Creator. After working as a farmer and as a bullfighter, Don Justo, as everyone calls him, joined a Trappist monastery, where he spent eight years as a monk.
He was forced to leave the monastery in 1961, after he suffered from tuberculosis, but promised himself that if he survived the illness he would devote his life to building a chapel in the name of the Lady of The Pillar (the Blessed Virgin Marry), who he prayed to during the ordeal(煎熬). His prayers were answered and he stayed true to his promise, laying the first brick of what would become a unique cathedral, almost 50 years ago.

Milk was one of the main foods of people long before history was written. It will probably keep on being one as long as there are animals that give milk.
Even the word “milk” is very old. It comes from Sanskrit (梵文 ), one of the oldest languages known to man. A very old picture of milking has been found. It was drawn more than five thousand years ago.
In the years long ago, people got their milk from their own animals. But later new inventions made the milk industry a big business. In 1851 Gail Borden found a way to take some of the water out of milk. This made it keep much longer. Four years later, Louis Pasteur introduced a way to kill the bacteria (细菌 ) in milk. Next, a special milk bottle was made. This was followed by the invention of machines that could fill bottles with milk.
These discoveries had a great effect on the milk industry. They meant that milk could be stored longer.
Some people believe that milk drinking will become less popular that it has been. But remember how long milk has been an important food and think of many ways in which it is useful. It seems safe to say that milk industry will always be important.

Everyone needs friends. We all like to feel close to someone. It is nice to have a friend to talk, laugh and do so many things together with. Surely, there are times when we need to be alone. We don't always want people around. But we would feel lonely if we never had a friend.

There's more good news for people, if they have friends. These people live longer than those who don't have friends. Why? It could be that they are happier. Being happy helps you stay well. Or it could be just knowing that someone cares about you. If someone cares about you, you take better care of yourself.

Nowadays, many students in our school are crazy about losing weight. Some of them eat very little to keep slim.
In my opinion, the best way to lose weight is to keep a healthy diet and do regular exercise. Firstly, we should say goodbye to junk food and snacks and try to eat more fruit and vegetables. But remember not to eat too little, or you’ll get sick very soon. Secondly, we shouldn’t spend too much time lying on our sofas or in beds.
